Wahoo

A streamlined, blue and silver fish with a long body and a forked tail fin.
Wahoo (Acanthocybium solandri) is a scombrid fish found worldwide in tropical and subtropical seas. It is best known to sports fishermen, as its speed and high-quality flesh make it a prize game fish. In Hawaii, the wahoo is known as ono. Many Hispanic areas of the Caribbean and Central America refer to this fish as pets.

The flesh of the wahoo is white to grey, delicate to dense, and highly regarded by many gourmets. The taste has been said to be similar to mackerel. This has created some demand for the wahoo as a premium-priced commercial food fish. In many areas of its range, such as Hawaii, Bermuda and many parts of the Caribbean, local demand for wahoo is met by artisanal commercial fishermen, who take them primarily by trolling, as well as by recreational sports fishermen who sell their catch. Catch them in Los Cabos.

Wahoo has a slightly sweet flavor with white, delicate flesh. It is often compared to Albacore Tuna.

Sea Bass (Calabra)

Sea bass (family Serranidae), any of the numerous fishes of the family Serranidae (order Perciformes), most of which are marine, found in the shallower regions of warm and tropical seas. The family includes about 475 species, many of them well-known food and sport fishes. Although the term sea bass may be used for the family as a whole, the fishes themselves bear a variety of names, such as hamlet, hind, cony, grays by, grouper, and jewfish, as well as sea bass and bass.

Catch them in Los Cabos, Black Sea Bass have lean, white flesh with a moderately firm texture, small flakes and a delicate flavor.

Rooster Fish

Rooster Fish, Nematistius pectoralis, is a game fish found in the warmer waters of the East Pacific from Baja California to Peru. It is the only species in the genus Nematistius and the family Nematistiidae. It is distinguished by its "rooster comb", seven very long spines of the dorsal fin.

The Rooster Fish has an unusual arrangement of its ears: the swim bladder penetrates the brain through the large foramina and makes contact with the inner ear. It uses its swim bladder to amplify sounds.

Catch them in Los Cabos, a challenging game fish, rooster fish isn't usually considered a tasty food fish. Its distinctive dorsal fins -- seven thin, long spines -- rise when the fish becomes excited, giving the fish its common name. When smoked rooster fish has it's best flavor. It tastes like roast beef.

Bonito

Bonitos are a tribe of medium-sized, ray-finned predatory fish in the family Scombridae – a family it shares with the mackerel, tuna, and Spanish mackerel tribes, and also the butterfly kingfish. Also called the Sardini tribe, it consists of eight species across four genera; three of those four genera are monotypic, having a single species each.

Catch them in Los Cabos, Pacific and Atlantic bonito meat has a firm texture and a darkish color. The bonito has a moderate fat content. The meat of young or small bonito can be of lighter color, close to that of skipjack tuna, and is sometimes used as a cheaper substitute for skipjack, especially for canning purposes, and occasionally in the production of katsuobushi. Bonito may not be marketed as tuna in all countries, however.

Blue Marlin

Blue Marlin has a mildly pronounced flavor with a very firm, almost steak-like texture. The flesh color ranges from white to pink depending upon diet, although it varies somewhat from fish to fish. Flesh with a high fat content has a natural sheen.

Black Marlin

Black Marlin(Istiompax indica) is a species of marlin found in tropical and subtropical areas of the Indian and Pacific Oceans. With a maximum published length of 4.65 m (15.3 ft) and weight of 750 kg (1,650 lb),it is one of the largest marlins and also one of the largest bony fish. It is one of the fastest fish species as well, having been recorded unwinding fishing line at 129 km/h (80 mph). Black marlin are fished commercially and are also a highly prized game fish. One of the trophy catches in Cabo San Lucas.

The flesh color of striped marlin varies from fish to fish and varies from light pink to orange-red. Fish with orange-red flesh are particularly desired for the sashimi market. Nairagi with pink to light-colored flesh are bought for up-scale restaurants. It is considered the finest eating of all marlin species because of its tender flesh.

Yellowfin Tuna

Yellowfin Tuna (Thunnus albacores) is a species of tuna found in pelagic waters of tropical and subtropical oceans worldwide.

Yellowfin is often marketed as ahi, from the Hawaiian ʻahi, a name also used there for the closely related bigeye tuna. The species name, albacores ("white meat") can also lead to confusion: in English, the albacore tuna (Thunnus alalunga) is a different species, while yellowfin is officially designated albacore in French and referred to as albacora by Portuguese fishermen.Acanthocybium solandri) is a scombrid fish found worldwide in tropical and subtropical seas. Fresh yellowfin tuna doesn’t look or taste like the tuna you buy in a can. It’s deep red in color with a sweet, mild flavor and a dense, firm, beef-like texture. Fresh yellowfin tuna is typically sold in loin form.

Red Snapper

Red Snapper (Sebastes ruberrimus) is a rockfish of the genus Sebastes, and one of the biggest members of the genus. Its name derives from its coloration. It is also locally known as "red snapper", not to be confused with the warm-water species Lutjanus campechanus that formally carries the name red snapper. The yelloweye is one of the world's longest-lived fish species, and is cited to live to a maximum of 114 to 120 years of age. As they grow older, they change in color, from reddish in youth, to bright orange in adulthood, to pale yellow in old age. Yelloweye live in rocky areas and feed on small fish and other rockfish. They reside in the East Pacific and range from Baja California to Dutch harbor in Alaska.

Marketed widely as Pacific snapper, these fish have fillets that are mild and slightly sweet-tasting.

Striped Marlin

Striped Marlin, Kajikia audax, is a species of marlin found in tropical to temperate Indo-Pacific oceans not far from the surface. It is a desirable commercial and game fish with a record weight (in 1982) of 190 kg (420 lb) and a maximum length of 4.2 m (13.8 ft). The striped marlin is a predator that hunts during the day in the top 100 metres or so of the water column, often near the surface. One of their chief prey is sardines. If you hook one of these in Cabo San Lucas, you are up for a good fight.

Striped Marlin (Nairagi) Flavor Profile. Striped Marlin has flesh which varies in color from light pink to orange-red. Orange-red flesh is especially desired by the sashimi & smoked fish market. It has a firm texture and a distinctive flavor which is similar to but more pronounced than the flavor of swordfish.

Mahi-Mahi (DURADO)

Mahi Mahi(/ˈmɑːhiːˈmɑːhiː/)or common dolphinfish(Coryphaena hippurus) is a surface-dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. Also widely called dorado and dolphin, it is one of two members of the Coryphaenidae family, the other being the pompano dolphinfish. Ahi means very strong in Hawaiian. These are one of the most prized catches in Cabo San Lucas.

Mahi Mahi has lean flesh with a mild, sweet flavor profile, moderately firm texture and large, moist flakes.
