I worked on my brine recipe over the years and have one that people seem to enjoy.
Our brine uses less salt than most commercial smokers use and we use a very special blend of spices that we import from Texas. We also use apple wood chips imported from the state of Washington, as I have found that for fish, it gives a sweet smoke flavor.
We only use the hot smoke method and reasoning behind this is to kill the parasites that are in fish.
We bring the internal temperature to 165 degrees which takes care of any problem with parasites.
All the fish that we smoke to sell is bought fresh from local fishermen or caught by tourists looking for a convnient way to take home the delicious catch!
Baja Fish Smokers provides smoked fish to a number of local restaurants here in San Jose del Cabo. I have a passion and great enjoyment in smoking fish. It is so rewarding, when someone tastes our fish and tell us it is the best they have ever tasted.
It's easy to turn your catch into a tasty treat. Just bring your catch to Baja Fish Smokers. If you want your own fish back, it takes a couple days for the smoking process and you can pick it up at a later time. We also offer an even exchange of your raw fish for one already smoked of equal size. This way, you don't have to wait and you can enjoy the smoked fish immediately. The even exchange also works great for our out of town customers who can't wait for the two day process.
SMOKING FOR FISH CAUGHT BY TOURISTS
If you catch fish while you are in Los Cabos, we can smoke and package
your fish for $8.00 a pound and that is smoked weight, not fresh weight.
You will lose 50% or more of the weight of you fish when it is smoked.
*There is a 36 hour turnaround time for us to deliver your smoked fish.
*Please note that we DO NOT FILET YOUR FISH.
STEP 1
Step one is to contact us before or after you fishing charter or expedition.
You can schedule for us to meet you to pick up your fresh catch of fish.
STEP 2
Step two of course is the funnest part other then eating & enjoying our delicious smoked fish.
You charter a fishing boat and catch some of the most delicious fish
the world has to offer in the beautiful Sea of cortez or Pacific ocean. Los Cabos & Baja has one of the most diverse ocean eco-systems in the world.
STEP 3
Either you can drop off your fish or you can use our pick-up & delivery services.
Once the fish is in our possession, we will begin the brining process in our proprietary brine recipe.
STEP 4
We begin the smoking process of your fish. The process form start to finish takes 36 hours to complete.
STEP 5
Once the fish is finished smoking we will vacuum seal your catch for transport with you back to your home.
STEP 6
